Cheesy Scrambled Eggs




  • 1 tbsp of olive oil
  • 3 handfuls of onions, mushrooms and spinach, finely chopped
  • 2 eggs
  • 40 g hard cheese, grated
  • 2 tbsp of milk or soy milk (unsweetened, malt free)
  •   Cracked pepper and sea salt to taste


  1. Heat olive oil in pan. Gently sauté onions, mushrooms and spinach.
  2. Beat eggs, cheese and milk together then pour into hot pan.
  3. Stir eggs every so often till scrambled appearance.
  4. Season and serve.
